Crepes are the French version of the pancakes.
They are a lot thinner and crispier (if you cook them longer)
The best way to enjoy them is with chocolate, fruits, hazelnut spread, icing sugar or whipped cream.
250g flour (sifted)
1 pinch of salt
40g caster sugar
40g butter (melted)
In a large bowl, put the flour, sugar, salt and eggs.
Mix them together, then slowly whisk in the milk until you get a smooth batter.
Pass it trough a sieve, then stir in the melted butter.
Heat a lightly oiled or buttered frying pan over medium high heat. Pour some of the batter onto the pan, just enough to fill the bottom of it.
Tip and rotate pan to spread batter as thinly as possible.
Get them brown on both sides and serve hot or cold.
